Heavenly tuna and zucchini patties

What you need:

4 portions

2 Cans of tuna in water
1-2 Large Zucchinis (depending on size)
1 Medium sized red onion
2-3 Cloves of Garlic
1 Tbsp of Mustard, preferably Dijon.
1 Tbsp of Boston pickles (A type of relish with pickled gherkins)
3 eggs
A handful of fresh Parsley
Lemonjuice from 1 Large lemon
2 Deciliters of Grinded Parmesan cheese
500 grams of Broccoli
A handful of Sugarsnaps and/or Hericoverts
30 grams Baby Spinach
5 dl of Creme Fraiché (Oatly if you want to skip the dairy product)

How to do it:

First of all you need to grind the Zucchini. They contain a lot of water so you need to squeese out all excess water before you put it in a bowl, otherwise you´ll end up with a soggy mess later in the process and your patties will fall apart. Grind your cheese and dice the onion and the garlic in small pieces and add it to the mixture.Then you add the tuna (not the water in the can), your mustard, boston pickles, Parsley, eggs and lemon juice. Blend it all together and taste. Here is when you add salt and pepper, you can be very generous with the seasoning. When everything is blended nicely its time to make the patties. They should be approximately 1/2 or 1 cm thick and be the size of the palm of your hand. Put the patties on a tray.


While the patties are done, you boil up water for your veggies. When the water is boiling you can heat up a frying pan and start cooking the patties. They take about 3-5 minutes on each side. Add the broccoli in the boiling water, when its almost cooked trough you put the sugarsnaps in there. When your veggies are cooked, take them out of the water.

In this dish I have served the patties and my veggies on a bed of Baby Spinach and some natural Creme Fraché with a dash of Black pepper and some of the leftover Lemonjuice.
