Warm Halloumi salad with Quinoa

What you need:

1-2 packages of halloumi. Look for one that is organic and made from milk. You don’t want the cheese with rennet.
4 portions of Quinoa
50 grams of Spinach
1 Red pepper
1 Yellow pepper
1 Red onion
Olive oil
Salt & pepper

How to do it:

Start by boiling the quinoa as per the instructions on the package. Then, dice the pepper and the onion in equally large pieces. Slice the halloumi and rinse the spinach. When the quinoa is almost done, add the spinach and season with salt and pepper. Alternatively, you can add a splash of vegetable broth.


When the quinoa is done, start frying the veggies in olive oil, followed by the cheese. Serve it all together with a squeeze of lemon and some black pepper on top.
