Spicy Enchiladas with Creamy Guacamole

If you can handle the heat, you will soon find out that this is heaven.


What you need:
8 whole grain tortillas
1 can of black beans
1 can of sweet corn
2-3 tomatoes
1 large yellow onion
1 red chili pepper
3 cloves of garlic
salt & pepper
paprika powder
BBQ spice
1 can of your favorite salsa sauce
4 ripe avocados
3 dl of crème fraîche/vegan crème fraîche
4 lime fruits
1 dl of seeds and nuts of your choice to toast and use as a topping
olive oil

How to do it
Start of by preheating the oven to 200 C. Dice and sear the onion, chili and garlic in olive oil until it softens. Then add the beans, corn and tomatoes. Start seasoning with all of the spices mentioned above. I like to take a generous amount of each, this dish was born to be a spicy and delicious. Fill the tortillas with the sauce, top it off with salsa and pop it in the oven until they’re golden and sizzling.

Make the Guacamole. Dice the avocados and blend them together with crème fraîche. Season and squeeze a bit of lime in it. Toast the seeds/nuts and sprinkle it on top of the enchiladas.
