Simple food = No veggies?

As much as I love fruits and vegetables I struggle to get my daily dose of them.

Lately I have been thinking a lot about how I can get a habit on fitting them into meals without making too big of an effort. What I concluded is that I need fruit and vegetables at home that are easy to prepare and/or add to the plate. Also, I need to have some veggies in the freezer, since fresh ones gets old pretty fast and I don’t have time to hang out at the grocery store every day.

At the top of this post you can see my rice with fried salmon and wok vegetables, which you find in the freezer at the grocery store. By adding some white wine to the rice and mixing everything together it gets sort of paella-ish.

Cashew curry with white radish salad. Make long strips or spirals with a potato peeler or a vegetable cutter, mix with lime juice (for two people, 1/2 radish and 1 lime).

Scrambled eggs with avocado, marinated garlics, red bell pepper and teen spinach with crema di balsamico and olive oil. Spinach, bell pepper and avocado fit with everything, so add it to everything!
