Sheepherder´s Breakfast

This is perfect for brunch or as a late lunch. The Sheepherder´s breakfast is a belly warming dish that goes perfect with black coffee.

What you need:

  • Bacon, sausage or vegetarian sausage
  • 4 Potatoes, peeled and grated
  • 1 onion, peeled and finely chopped
  • 2-4 free-range eggs
  • Pepper, salt, olive oil
  • Tomatopaste
  • Cheese of your choice, I picked parmesan

How to do it:

Fry the potatoes, onion and your protein. Blend it all with tomatopaste, salt and papper. Bake in the oven for about 15-20 minutes. Then add the eggs and put it back in the oven. Take it out after 5 minutes and grate cheese over the dish.
