Salmon with Blueberry-Pineapple Salad

Antioxidants, vitamin C and lean protein? Yup. It’s all here.

What you need:

4 portions of Salmon
4 portions of Beluga Lentils
1 Red onion
1 Ripe Pineapple
4 dl Blueberries
200 grams of cooked soybeans
2 Grilled peppers
5-6 dl of green or red Kale
Lemon
Dill
Olive oil
Salt and Pepper

How to do it:

Boil the lentils after the instructions on the package. Shred the kale, peel and dice the pineapple and the onion. “Grill” the peppers in a warm frying pan with oil, dice them and put them together with blueberries and the other ingredients in a salad bowl, gently mix the salad as to not crush the blueberries.

Meanwhile:

Start to fry the salmon, season with some lemon, dill, salt and pepper. Serve with the salad and the lentils. Optional is to serve this with a dressing or a sauce, otherwise just squeeze some lemon over and drizzle some olive oil.
