Garlic & Chili Scampi with stired fried Vegetables and Peanut sauce

What you need:

  • 1 kg Scampi, pre-cooked and rinsed
  • 3 cloves of garlic
  • 1 lime & 1 cm of finely diced ginger
  • 1 red chili
  • 1-2 dl peanut butter
  • 2 tbsp. sambal oelek
  • A dash of peanut oil
  • 1 can of coconut milk
  • 1 broccoli
  • 1 red onion and 2 spring onions (to sprinkle on top)
  • A handful of fresh spinach
  • Soy sauce, pepper, and coriander

How to do it:
This is a very quick dish, it takes under 30 minutes to prepare and cook. 

Start with the Scampi. Let them marinate with oil, chopped coriander, garlic and chili. Meanwhile heat up a saucepan and mix peanut butter, sambal oelek, coconut milk, pepper, ginger and soy sauce and let it simmer together. While that’s cooking, start by heating up a wok or a large frying pan and start frying the chopped broccoli, onion and spinach. Press half of the lime on the stir-fry and the other half in the sauce. Mix the Scampi together with your veggies and cook for another 3 minutes before serving.
