Falafel, strawberry salad and tzatziki – A Vegan delight!

This is a simple and easy dish to make when you are hungry and have a craving for something sweet, salty and crispy.

What you need:
250 grams of fresh strawberries
70 grams of baby spinach
70 grams of rucola
1/2 red onion
1/2 cucumber
Salt, pepper and chili flakes
3 cloves of garlic
3 tbsp. of toasted sunflower seeds
4 portions of falafel, home made or store-bought from a good eco-friendly vegan brand
5 dl of crème fraîche

How to do it:
Shred the cucumber and finely dice the garlic. Blend it with the crème fraîche, salt & pepper in a bowl.  Blend the spinach, rucola, strawberries, diced red onion, and toasted sunflower seeds. Fry the falafel and just enjoy. It’s that simple and so delicious!
