Crispy fried salmon with asparagus and boiled potatoes



Cooking don´t have to be difficult for an amazing result. I am all for simple and clean cooking with fresh and humble ingredients. This recipe is a personal favorite of mine because there´s something special with a perfectly cooked salmon with crispy skin and tender meat, complemented by the vegetables of the season. For this dish I used new potatoes, asparagus and fresh dille.


What you need:
4 portions of fresh salmon
16 potatoes
Olive oil
Salt & black pepper

How to do it:
First of all you´ll need to heat up water to boil for your potatoes. Peel them and let them boil with a handfull of dille untill the potatoes are soft in the center. It should take about 30-40 minutes. When the potatoes are done it´s time to heat up a non-stick frying pan. Take your salmon steaks and pat them with olive oil, season and place the skinside down in the frying pan. Leave them for 2-3 minutes to get a really crispy skin. Turn it and sear on each side for about 1 minute.  When the salmon is cooked its time to fry up the asparagus with some olive oil and salt. Serve it all together with capers and squeezed lemon on top.
