Chickpea salad & Barley grain

What you need:

1 can of Chickpeas
1 Parsnip
2 Tomatoes
70 grams of Spinach
1 dl of mixed Olives
1 Red Onion
4 portions of Barley grains
1 clove of Garlic
Mexican spice mixture

How to do it:
Toast the chickpeas in a frying pan together with sliced red onion, garlic, diced parsnip and olives. Add the spice mix and a dl of water to let it all soak in. Start boiling the Barley grains as per the instructions on the package. When the grains are done, blend them together in a large bowl with spinach, tomatoes and your chickpea mixture and just enjoy.
