BBQ Beanburger with Sweet Potato Fries

What you need:

6 portions.

6 Hamburger Breads (I used whole grain buns)
5-7 pieces of French Toast
6 dl Boiled Black Beans
4 dl Boiled White Beans
1 dl of Canned Corn
1-2 dl of Milk (I always use unsweetened non-dairy milk)
3 Cloves of Garlic
A pinch of Salt, Pepper, Chilli Powder, Powdered Smoked Paprika, Cumin
BBQ Sauce, in this recipe I went with Sweet Baby Ray’s, Smoked Hickory.
2 Red Onions
3 Tomatoes
4 Large Sweet Potatoes
Cooking Oil

How to do it:

Shred the toast into small pieces, put in in a bowl together with milk and let it rest for a moment. This will be the mixture that binds and adds moisture to the burgers. Preheat the oven to 200 degrees C.  Add the beans and squish them together with the bread. Start to season your mixture and add some diced/pressed garlic and corn. If the mixture is too loose just add more bread, if it’s too solid, add more milk until you are satisfied. Start to make patties and fry them in a pan until golden. Peel the potatoes and cut them into “equally” long and thick fries. Spread out on an oven tray. Add salt, pepper and some oil and put in the oven to roast.  Your fries are done when they have a golden crust and are soft in the middle.

Dice the tomatoes, lettuce and the onion, toast your burger buns and serve the dish with a BBQ sauce you love.
